According to Ulster BOCES LPN instructor Carol Blackwell, the annual Food Fest covers a unit in nutrition under the Licensed Practical Nursing (LPN) curriculum and has been a part of the program for the past ten years.
“Students were asked to prepare a nutritious dish using what they learned from studying nutrition,” explains Blackwell, adding that along with their dish, students must submit a list of ingredients and food values, such as fat, calories, vitamins, etc.
Students prepared the dishes at home and brought them into the classroom where Blackwell’s colleagues and friends served as judges, sampling each of the dishes. The dishes were then rated based on criteria such as presentation, taste, and food value.
The judges said such wonderful remarks as, “We can’t decide, it is all so good!” and “Why don’t you have the students do this once a month?”
As a bonus, the selected “best” dishes were awarded a grade of 100% toward the 20% of the nutrition grade that the project counted towards. All other dishes received a grade of 90%.
And the best part of the event? “After the judging, the students ate and enjoyed everything they made!” says Blackwell.
“The students did a wonderful job,” credits Blackwell. “They demonstrated a great deal of interest in what to make and even those students who ‘don’t cook’ came up with some really creative ideas. They not only learned about nutrition, they applied it in a very tasteful manner that we all enjoyed.”
