AVIATION Learn to fly! This program provides students with basic knowledge of
the equipment used in aviation to prepare them to qualify for their
Federal Aviation Administration-approved (FAA) pilot’s license. Emphasizing navigation and operation of a single engine airplane, students also learn meteorology, instrumentation, and the principles of flight. Other activities include map work, trip plotting, and actual flight time in a single-engine airplane at River Aviation in Kingston, New York. A student may fulfill a one-credit science requirement by taking this course.

Educational Opportunities
Students who successfully complete the Aviation Careers/Professional Pilot Training program and have earned their private pilot’s license can receive up to 6 credits at aviation-oriented colleges.

COSMETOLOGY
If the idea of becoming a cosmetologist is attractive to you, Ulster BOCES
offers instructional and practical experience in both the skills and theories
necessary to gain employment in this growing field. The two-year course includes instruction in hair, skin, and nail care, as well as all related services offered in beauty salons. Practical experience is gained by working in a lab setting similar to that of today’s modern salons.

Educational Opportunities
Successful completion of the program qualifies students to take the New York State Cosmetology Licensing Examination. Students who have obtained their license would benefit from completing a two-year or four-year program in small business management.
Graduates may advance to courses offered by the Redken Exchange, Jingles International, Paul Mitchell, and the International Beauty Show.

CRIMINAL JUSTICE
Explore the history, structures, and processes of the criminal justice system. Investigate the fields of private security and fire safety. Students learn law enforcement concepts and techniques, as well as court and corrections procedures. The program places emphasis on the study of New York State Penal Law, law enforcement today, the individual citizen and the law, and career exploration. Students participate in hands-on, practical skill instruction including radio usage, fingerprinting, crime scene investigation, vehicle stops and searches, patrol, crime scene sketching, and forensics. In addition, students have the opportunity to participate in field trips, school-to-work internships, and industry-related work details. Students are required to maintain a written Criminal Justice manual and wear a prescribed uniform on a daily basis. The program features guest speakers, related crime videos, and career orientation, as well as integrated academics.

CULINARY ARTS
You’ll really be cookin’ with the food preparation courses offered through the Culinary Arts program. This two-year program is designed to teach students the management skills needed for a career in the restaurant and food service industry. The fundamentals of food preparation, baking, sanitation, and dining room operation are among the topics covered in the program. Mentored by industry professionals, students participate in paid internships where they learn the management skills needed for a career in the restaurant and food service industries. In addition, students are provided with the opportunity to experience restaurant work first-hand at the “Beaux Seas”, an on-site dining room located at the Ulster BOCES Career & Technical Center.
As students meet established academic standards and complete a checklist of competencies, they are awarded the ProStart National Certificate of Achievement. According to statistics published by the National Hospitality Business Alliance, Ulster BOCES is among only 14 secondary school programs in New York State that offer the ProStart curriculum, which is known for teaching high industry standards.

Through a variety of articulation agreements made possible by the National Restaurant Association’s Educational Foundation and the Hospitality Business Alliance ProStart Educational Program, students receive culinary, management, and work experience credits. Opportunities to attend many excellent colleges are also available, as well as opportunities for advanced standing at more than 25 colleges throughout the country.

EARLY CHILDHOOD EDUCATION
This two-year program is especially designed for individuals interested in working with infants through elementary-age children. Students observe, participate in, and develop a variety of activities with infants, toddlers, and preschoolers while understanding child development. Students model developmentally appropriate practices that enhance the development of children in an early childhood education setting.
